Co-Founder and Distiller at Cape Byron Distillery, Eddie Brook's Shirl the Pearl gin was inspired by his Grandma aka ‘Shirl the Pearl’. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
Try Shirl with Tonic, in a Spicy Margi with Tequila and Lime Juice, or mix with Lemon, Honey, and Hot Water for a twist on the well-loved Hot Toddy.
