On the rugged coastline of South Australia’s Eyre Peninsula, where native bushland meets the Southern Ocean and salty winds sweep across the scenery, you’ll find Coffin Bay Spirits – a distillery that has built its reputation on capturing the flavours of its remarkable backyard.

From the botanicals foraged and seaweeds harvested to the spirits created and experiences shared, everything at Coffin Bay Spirits begins with a deep respect for their wild surrounds, a philosophy that makes it one of Australia’s most distinctive craft spirit producers.

ABOUT THE DISTILLERY

For founders Ben and Caro Deslandes, Coffin Bay Spirits began with a fascination for the environment long before it began with spirits. The pair met at university before forging careers in Indigenous land management across some of Australia’s most remote regions. Working alongside Indigenous communities, they were guided by Traditional Ecological Knowledge to develop a deeper understanding of Australia’s native ecosystems and the plants that thrive within them.

As Ben explains, “That grounding in land and country has played a huge part in how we got to where we are. At its heart, it all comes back to a love of botanicals, and of understanding the landscapes they come from.”

The idea to start a distillery sparked during COVID. With remote contract work on hold, Ben and Caro suddenly found themselves with something they rarely had: time to properly explore the remarkable property they had recently taken on along the Lower Eyre Peninsula.

Stretching along 1.5 kilometres of uninterrupted coastline overlooking Coffin Bay and the Coffin Bay National Park peninsula, the location is home to one of the region’s last remaining parcels of undisturbed, uncleared coastal bushland. Largely free from introduced species, it offers a rare glimpse into a landscape that has changed little over time.

While their knowledge of botanicals was already extensive, this newfound time allowed them to dig deeper. Native fruits, coastal herbs and endemic plants were collected, studied and, most importantly, tasted. With such distinctive botanicals at their fingertips, gin presented the perfect canvas to showcase them. The early days were filled with what Ben affectionately describes as “bathtub-style experimentation,” infusing and steeping whatever was growing around them. Those experiments evolved into a library of hundreds of endemic botanicals gathered from the property and the surrounding Lower Eyre Peninsula, a collection that continues to inspire the spirits they create today.

Those early discoveries eventually led to the release of Rare Coastal Gin, the distillery’s first spirit and the beginning of an enthusiastic following that quickly spread beyond the Eyre Peninsula. As interest grew, so did the vision: rather than a simple production facility, Ben and Caro set out to create a destination that would allow visitors to completely immerse themselves in the same landscape that had inspired them.

Today, Coffin Bay Spirits sits atop a ridgeline surrounded by 500 acres of private coastline, and while the property forms the heart of the distillery, it is equally shaped by the wider Eyre Peninsula. Long renowned for producing some of the world’s finest seafood, it’s home to an extraordinary network of growers, producers, tourism operators and small businesses. Ben and Caro work closely with many of them, drawing inspiration from local produce and championing the people who make the area so special.

Operating on the Eyre Peninsula also brings practical advantages: the team has access to exceptionally pure rainwater, and an abundance of endemic botanicals found not only on their own property, but right across the Lower Eyre Peninsula. The local community also shares a deep connection to the coastline; visitors are often surprised to discover that many of the botanicals and wild seaweeds featured in the distillery’s experiences are grown on nearby beaches, sometimes even in their own gardens. For Ben and Caro, helping people rediscover the flavours of their own backyard is one of the most rewarding parts of the journey.

The distillery also operates entirely off-grid through a closed-loop system, with rainwater collected and stored on-site before being used throughout the distillation process. Sustainability is woven into everyday operations, reflecting the team’s deep respect for the landscape that inspires their spirits.

Their work with seaweed is especially pioneering: after years of research and applications, Coffin Bay Spirits secured Australia’s first permit of its kind allowing the harvest of multiple seaweed and seagrass species. Much of it is collected by hand through free-diving expeditions off the coastline below the distillery, introducing visitors to flavours, aromas and textures rarely encountered outside the marine environment.

ABOUT THE GIN

If Coffin Bay Spirits reflects the Eyre Peninsula coastline, High Tide Gin is perhaps its purest expression.

Inspired by Coastal Saltbush, one of the most remarkable native plants growing along the shores surrounding Coffin Bay, High Tide Gin was created to capture the character of the Southern Ocean in liquid form. Rather than combine dozens of competing ingredients, Ben and Caro took a deliberately minimalist approach to their recipe, letting the saltbush take centre stage.

Unlike many contemporary gins, High Tide is built around just four carefully selected botanicals: hand-foraged Coastal Saltbush, Native Coastal Rosemary (Olearia), juniper berry and coriander seed. A simple recipe on paper, but one that speaks volumes about the distillery’s philosophy of letting exceptional ingredients do the talking.

The star of the show is the Coastal Saltbush. Harvested during the highest tides, the plants are regularly exposed to the full force of the Southern Ocean, sometimes spending hours submerged beneath the water. Constant exposure to wind, salt spray and the harsh coastal environment creates a botanical with remarkable depth, savoury complexity and a distinctive peppery character that forms the backbone of the gin.

Supporting the saltbush is Native Coastal Rosemary. Another hand-foraged ingredient contributing fragrant herbal notes, it evokes a walk through the windswept coastal vegetation lining much of the Eyre Peninsula. Traditional gin staples juniper and coriander provide structure and balance, allowing the native botanicals to shine while maintaining a recognisable gin profile.

On the nose, green freshness mingles with a delicate hint of sea spray. The palate unfolds with a burst of coastal minerality, savoury complexity and earthy black pepper warmth before giving way to a long, refreshing finish.

It’s a profile the team affectionately describes as “sea spray in a bottle,” and after a glass or two, it’s hard to argue with the comparison. Fresh, aromatic and coastal without leaning briney, High Tide Gin captures the feeling of standing on a cliff top as a storm rolls in from the Southern Ocean, offering a true taste of the wild landscape that inspired it.

ABOUT THE VENUE

While the gin offers a taste of the landscape, a visit to Coffin Bay Spirits allows guests to experience it firsthand.

The distillery, years in the making, is built using recycled native timber, with a five-tonne limestone boulder sourced from the property as the centrepiece of the bar. Alongside is an illuminated seaweed installation showcasing species that inspire the distillery’s creations.

Yet perhaps the most memorable feature is the view: the Southern Ocean remains hidden until the final few steps into the cellar door. Sweeping coastal vistas suddenly reveal themselves, a dramatic introduction to a landscape that leaves a lasting impression, whether you’re watching the sun set over the water or gazing at the stars long after dark.

Unlike traditional cellar doors, Coffin Bay Spirits focuses on intimate group experiences; guests can wander the Botanical Trail with gin in hand, sampling native fruits and wild seaweeds, and discovering the botanicals that shape the distillery’s spirits.

The experience culminates in a six to seven-course degustation-style menu featuring local seafood and regional produce, complete with cocktails. With the entire 500-acre property licensed, no two visits are quite the same, creating a uniquely personal way to experience the flavours, stories and landscapes of Coffin Bay.

THE REST OF THE RANGE

The spirit that started it all was Rare Coastal Gin, the distillery’s first release and the gin that helped define its identity. Featuring hand-foraged coastal fruits including coastal boobialla, bearded heath and karkalla fruit alongside two species of free-dived seaweed, this seasonal release captures the purity and complexity of the coastline that inspired it.

Another standout is Nitre Berry Gin from the distillery’s Endemic Collection: celebrating one of the Eyre Peninsula’s most fascinating native fruits. More than 200 kilograms of nitre berries are required to produce just 400 bottles, resulting in a limited-edition gin with a flavour profile unlike anything else.

The lineup also includes the floral Bush Blossom Gin, ready-to-drink High Tide Gin & Tonic cans for on the go, and an exciting whisky program quietly maturing behind the scenes.

Coffin Bay Spirits isn’t slowing down anytime soon. While future releases remain under wraps, Ben hints that their attention is increasingly turning towards the ocean and the endless possibilities waiting beneath its surface.
