As the nights draw in and the air takes on that familiar winter chill, our drinking rituals begin to shift. Crisp, citrus-forward G&Ts make way for something a little moodier.

Enter a gin that leans beautifully into that darker side: Truepenny’s Indigo Butterfly Pea Gin: a brand-new release, created in collaboration with Garden Street.

In the glass, it pours a deep indigo that is darker and more atmospheric than you might expect from a classic G&T. Add a splash of tonic or a squeeze of citrus, and the spirit begins to transform, shifting through shades of violet, lavender, and soft pink as the acidity works its magic.

ABOUT THE DISTILLERY

Truepenny sits within Thirsty Group, an independent Australian spirits and hospitality outfit based in Melbourne’s south-east. It’s far from a corporate operation. At its core is a small, tight-knit team where everyone wears multiple hats, and the line between making the spirit and getting it into people’s hands is intentionally blurred.

As they put it, “there’s no daylight between the people who make the spirits and the people who sell them.”

The story begins back in 2017, when founder Dom and his co-founder Jake launched Baxter Vodka. They built the brand from the ground up; knocking on doors, pouring samples, and showing up wherever they could across Melbourne’s bars, venues, and events. It’s a presence that still carries through today, chances are, if you’ve spent time around the local scene, you’ve come across the brand in one form or another.

What started as a way to create a product has grown into something broader; a steadily expanding house of brands, shaped by a team that’s clearly playing the long game.

Today, Dom remains closely involved across every part of the business, from recipe development and distillation through to brand direction, keeping the operation connected and responsive. More recently, head distiller James Haddow has joined the team, bringing with him experience from crafting award-winning whisky at Starward, along with a broad background in gin production. His role has been to refine and elevate their range, with Truepenny among his first major projects.

At the centre of it all is a 2000L Australian-made copper still; a serious piece of equipment, and one that speaks to the scale of what the team are working towards. It’s a hybrid setup, giving the team flexibility to move between clean base spirits and more expressive, botanical-forward styles. For gin, that often means combining traditional maceration with vapour infusion, then fine-tuning the process depending on what each recipe calls for.

Despite the scale of the operation, and the size of the still itself, the team behind it remains deliberately small. It’s a setup that runs on energy and intent, with a clear sense that everyone involved is deeply invested in what they’re building.

“There’s something undeniably exciting about walking onto the floor when a gin run is in progress. The air is thick with juniper and botanicals, the still is doing its thing, and you can watch the spirit come off the condenser in real time.”

That same thinking extends beyond the gin. The Truepenny range is built around a simple idea: “Honest Spirits”, with branding designed to reflect their authenticity. For this month’s exclusive Australian Indigo Gin, that identity has been adapted to reflect the vivid colour of the gin itself, while still holding onto its classic roots.

It’s a setup that doesn’t try to romanticise itself. Just a small team, a busy distillery floor, and a clear sense of momentum: building something steadily, and with intent.

ABOUT THE GIN

Exclusive to Garden Street Gin Club and produced just for you, the Truepenny Australian Indigo Gin is designed to captivate from the very first pour.

Despite what its vibrant colour may imply, this gin boasts a classic London Dry foundation – clean, structured, and confidently juniper-led. From the very first sip, however, it’s clear this is no novelty expression. The liquid settles into the glass as a deep, inky indigo that is rich, luminous, and entirely natural.

Then comes the transformation.

As tonic is introduced, the gin begins to shift – slowly, beautifully – from indigo to violet, then into soft lavender and delicate pink. It’s a mesmerising moment that unfolds right in the glass, driven by the natural pH reaction of butterfly pea flower. No artificial colours, no embellishments – just nature performing at its most captivating.

And while the visual theatre is undeniably the hero, what follows on the nose and palate ensures this gin is far more than a novelty.

Aromatically, it opens with a bright, lifted juniper note before easing into a gentle, romantic floral bouquet – perfumed and layered with a subtle berry-like lift. On the palate, juniper leads before giving way to a more expressive middle, where soft florals and a light tartness comes through. A faint, tea-like note lingers on the finish, keeping everything clean, balanced, and effortlessly drinkable.

It’s this duality that makes the gin so compelling – visually playful, yet structurally refined. A limited-edition release that doesn’t just catch the eye but keeps you coming back again and again.

Other products in the range

Alongside this exclusive Indigo release, Truepenny’s flagship Australian Gin leans into a more classic, all-rounder style. It’s built to be balanced and easy drinking, with a citrus-led nose, gentle florals, and a clean juniper backbone. Botanicals like thyme, lemon myrtle, chamomile and native pepperberry give it lift, keeping things bright without overworking the profile.

Truepenny sits within the broader Thirsty Group portfolio, which has grown steadily from its early days with Baxter Vodka. 

There’s the Aubrey liqueur range, where things turn more playful with passionfruit, lychee, mango, watermelon, elderflower and coffee offerings among its range built on Australian grain spirit with a focus on natural flavour. Burn City Spiced Rum takes a different direction again, a richer, more grounded spirit that leans into spice and texture, shaped as much by Melbourne’s character as by the liquid itself. Then there’s Southern Spirits Co, a more stripped-back range designed to be accessible without losing that sense of quality.

Many of these brands are already a familiar sight across Melbourne’s bars and venues, a reflection of just how hands-on and present the team remains within the local scene.

It’s a lineup that moves across styles and price points but still feels connected; a reflection of a team that’s as comfortable refining a classic as it is experimenting with something new, with more still to come.
