Backwoods; noun: A wooded area located away from big cities and the influence of modern life. A place you can go to escape, and experience something different.

This month, we’re ditching the city’s hustle and bustle for the serene surrounds of Victoria’s High Country. At Backwoods Distilling Co., it’s all about embracing the essence of Australia; 100% local produce, community and native botanicals. Receiving widespread critical acclaim – including awards at the esteemed London Spirits Awards and Australian Distilled Spirits Awards – every one of Leigh and Bree Attwood’s spirits takes your tastebuds off the beaten track.

ABOUT THE DISTILLERY

Yackandandah, or ‘Yack’ as the locals fondly call it, is nestled in Victoria’s High Country region, a lazy three-hour drive from Melbourne’s CBD. The quaint town, steeped in the sly grog legacy of the nineteenth-century gold rush, now flaunts a National Trust classification and brims with celebrated artists – from potters to painters, designers, and distillers. It’s here, in the Yack Station Artisan Precinct, where you’ll stumble upon Bree and Leigh Attwood’s passion project, Backwoods Distilling Co.

Originally hailing from Myrtleford in Victoria’s North-East, Bree and Leigh made the move to Melbourne, where Bree worked in communications and Leigh as a secondary school teacher. The couple’s love for whisky, science, and storytelling blossomed into a dream to one day operate their own distillery. Drawn by the narratives and connections whisky creates, they aspired to join the wave of small-scale, family-run Australian distilleries. Fast forward 15 years, the allure of a slower-paced life surrounded by nature beckoned, and the couple eagerly swapped city life for their rural roots.

“We wanted our boys to spend time outdoors, to get dirty and find adventures in the woods and creeks! And it was this big move, this fresh start in a new place, that gave us the courage to start our distillery.”

In 2017, their dream took shape with the launch of Backwoods Distilling Co. in the back shed of their new Yack property. Initially juggling the distillery with their day jobs, they finally took the plunge full-time in 2021, dedicating themselves to their craft.

“With our spirits, we aim to transport people away from their busy lives and into the backwoods of Yackandandah.”

Backwoods by name and by nature, the distillery focuses on releasing small batches of handcrafted spirits that embody the Australian bushlands through bold flavours and native botanicals. Indeed, every drop of their spirits – from the rainwater to the botanicals – celebrates their local landscape as authentically as possible.

“We believe this makes us uniquely Australian and allows us to benefit from the success of the Australian alcohol industry that produces some of the world’s best spirits, wine, and beer,” says Leigh.

Like many, their journey to craft the distillery’s signature gin is a tale marked by COVID-19 challenges. Bree and Leigh initially planned to open their new distillery venue in 2020, focusing solely on single malt and rye whiskies, until the pandemic put their plans on ice. However, the unexpected free time allowed the Attwoods to experiment with gin, aiming for the perfect balance to represent their terroir – a challenging task with flavours that can easily become overpowering. After trialling and tweaking five recipes, they finally perfected what is now their High Country Gin. Early feedback from friends and family described it as “tasting like a walk in the high country.” Launched in 2021, their High Country Gin quickly became a favourite among gin enthusiasts – including us!

Today, the distillery boasts a 500L copper column gin still, affectionately dubbed ‘Stillvia’, 1250L whisky copper pot ‘Stillvester’, along with a 2000L mash tun and two fermenters. Alongside Tony, the dedicated full-time staff member assisting Leigh in brewing and distilling, you’ll meet casual staff running the tasting room, ensuring every visitor has a memorable experience.

ABOUT THE GIN

Inspired by the lush landscapes of Victoria’s High Country, this gin doesn’t just capture the essence of the region – it transports you there with every sip. A quintessential Australian Dry Gin, it’s a labour of love from the Backwoods Distilling Co. team. It showcases in a signature blend that’s both bold and fragrant, with just the right hint of spice.

The cornerstones of every great dry gin – juniper, coriander, cardamom, angelica root, and orris root—are steeped and boiled in a classic distillation method, forming the heart of the gin. From these, the real artistry begins. Through a refined vapour infusion process, Australian native botanicals including lemon myrtle, pepper berry, wattleseed, peppermint gum, and strawberry gum are delicately introduced. This meticulous blend yields a gin that marries the classic dry gin botanicals with the bold, distinctive flavours of the local bushlands. High Country Gin has earned accolades with silver medals from the London Spirit Awards in 2021 and the Australian Distilled Spirits Awards in 2022.

So, whether you’re indulging in a classic G&T or crafting a creative cocktail, High Country Gin is your passport to celebrate the rugged beauty and vibrant flavours of the Australian landscape.

ABOUT THE TASTING ROOM

Housing the Backwoods distillery door and production space is the Yack Station Artisan Precinct. The venue is a marvel of reclaimed materials, including pieces from old railway stations and nearby yards. A heritage railway guard’s van serves as a charming coffee shop. Soon after settling in, Backwoods was joined by an artisan baker, a woollen rug maker, a hairdresser, and a jeweller, creating a vibrant hub of culture and creativity for the community to relish.

When visiting, you can expect a welcoming and unpretentious experience that mirrors the distillery’s ethos and spirits. Guests will be greeted by either Bree or Tony and can enjoy a tasting paddle right alongside the production space. On weekdays, you can usually catch the team in the midst of distilling, allowing you to sample a tasting paddle of gin or whisky right amongst the action. A simple menu of mixed drinks is on offer, such as the Salted Lime Gin Margarita, or a range of G&T’s. As part of the Yack Station precinct, you can also order jaffles and coffee from the neighbouring Guard Café.

OTHER PRODUCTS IN THE RANGE

Backwoods Distilling Co. have a delightful range of gins, each with its own unique flavour profile. Take their Salted Lime Gin, for instance. With desert lime, finger lime, old man saltbush, and Murray River pink salt, it’s the perfect summer sipper to swap for tequila in a Margarita, or in a refreshing Paloma.

Then there’s the Provenance Gin, the first-born of their collaboration series. Partnering with chef Michael Ryan of Provenance Restaurant in Beechworth, Backwoods combined bergamot, shiso, and cherry blossoms to create a gin that’s citrusy and floral with a subtle hint of spice. And last but not least is their Muscat Gin, a limited-edition gem created with Scion Wine of Rutherglen. This seasonal delight blends Rutherglen Brown Muscat grapes with their High Country Gin for an indulgent, rich tipple.

Alongside their gins, Bree and Leigh’s hearts belong to their range of whiskies. Their white oak-aged rye and limited-edition single malt whiskies, have garnered critical acclaim as some of the country’s best, each batch with only 160 bottles available. Eager eyes from Barrel Lane Whisky Club may know just how delicious these limited releases are, and they are well worth a sample!

As a small-scale, family-operated distillery, Backwoods is always innovating. Their small-batch whisky bottlings typically sell out within hours, so your best bet is to visit them in Yack and taste their upcoming releases yourself. As for their next gin, we’ve heard whispers that a Blood Orange and Honey gin is in the works... Say no more.

Gin type – London Dry

Appearance – Clear, bright

Botanicals – Juniper, coriander, cardamom, orris root, angelica root, lemon myrtle, pepperberry, wattleseed, strawberry gum, peppermint gum

Aroma – Piney juniper, zesty citrus, and subtle strawberry gum

Palate – Nutty wattleseed unfolds into sherbety lemon myrtle citrus and a spicy back palate

Finish – A crisp, sweet eucalypt edge from strawberry gum leaf and peppermint gum is balanced with a warming pepperberry spice
