Ballarat may be best known for its gold rush glories and grand heritage buildings, but it also holds a lesser-known claim to fame: the site of Victoria’s first legal distillery. From the 1860s to the 1930s, gin and whisky flowed from the region – a tradition that’s seeing new life today thanks to a wave of passionate, independent distillers. Among them is Kilderkin Distillery, a small but spirited operation helping to put Ballarat back on the map for lovers of well-made spirits. Just a few minutes from the heart of the city centre, in the historic suburb of Mount Pleasant, you’ll find a red brick beauty that once rang with the clang of welding and metalwork. These days, the sounds have softened – replaced by the quiet hum of distilling and the clink of glassware – but the spirit lives on inside Kilderkin Distillery.

About The Distillery

Behind Kilderkin Distillery – the home of Larrikin Gin – are founders Chris and Rebecca. He’s Scottish by blood, she’s a Brunswick native, and the pair have built a craft distillery that’s continuing Ballarat’s distilling history with humour, heart, and an unwavering respect for the spirits they produce.

Their journey began, as many great ones do, with travel and a shared curiosity. Every visit to Scotland to see Chris’s family turned into a bit of a pilgrimage – distillery tours, whisky tastings, and the occasional scenic stop to savour a glass somewhere special. By 2015, those holidays had evolved into dedicated research tours across Scotland and England, with one goal in mind: to lay the foundations for their own venture back home.

Chris’s first taste of whisky came not from a bar but a teacup – a sugared hot toddy, doled out as a childhood cold remedy with all the wisdom of old-school Scottish parenting. It may not have sparked a lifelong obsession then and there, but it certainly planted a seed. Paired with his heritage and many a pilgrimage to Scottish distilleries, whisky naturally took pride of place in the couple’s early plans. They envisioned crafting small batch single malt, aged in traditional 81.8-litre casks known as kilderkins – an old English measure with a name as distinctive as the spirit it holds. The name Kilderkin felt like the perfect fit: a nod to tradition with a curious charm all on its own.

But somewhere along that research tour, their focus began to shift. Observing the versatility and potential of gin production, Chris and Rebecca saw a new path opening up before them – one that didn’t require years of barrel ageing, and one that let them work with Australia’s remarkable native flavours from day one.

“Given that Australian native botanicals were going to be a big focus in our gins and we were keen to push the boundaries while having loads of fun, we wanted a name that reflected the Australian way of life and our approach,” they explain. “What better name than Larrikin!”

Chris and Rebecca didn’t just build a gin with character – they built a team to match. Lionel, Brody, Sarah, Bec, Stirling and Tatiana – all Ballarat locals – embody the Larrikin spirit in full: they’re skilled, welcoming, and always ready to stir up a little mischief. Whether they’re running the stills, hand-labelling bottles, or mixing up something delicious behind the bar, they bring heart to every aspect of the operation.

Capturing the personality of each gin on the outside of the bottle was also super important. So, when the time came for a brand refresh, they teamed up with a Ballarat-based brand strategist to help bring that vision to life. Working with a graphic designer, they created a look that celebrates the bold, irreverent spirit behind each release. The smiley logo and offset labels reveal a true-blue larrikin peeking through the glass, with every gin featuring a different persona and a backstory on the reverse. Original Larrikin stars “Billy Blue”, the character many consider Australia’s original larrikin. At events, the team often turns the bottles just-so, so that both character and name are visible at a glance. Chris says it’s easy to spot the curious types who rotate each one as they chat, slowly getting to know the personalities on the shelf – and, by extension, the spirit inside.

About the Gin

This month’s featured gin, Original Larrikin, was the very first spirit to flow from the Kilderkin stills – a bold debut that’s been stealing hearts (and shelf space) ever since. From the outset, Chris and Rebecca were ‘absolutely smitten’ with the idea of creating a gin that celebrated Australia’s native botanicals – a spirit that captured the wild, vibrant character of the land around them.

The early trials, though, may have been a little overenthusiastic. One batch in particular leaned so heavily on the lemon myrtle that a visiting distiller took a sip and politely dubbed it “a great lemon-flavoured vodka.” Rather than ditch the recipe, they took their time, adjusting the ratios and running blind tastings with bartenders, distillers, and gin-loving friends until every note landed just right.

The finished gin is anything but ordinary – layered, expressive, and distinctly Australian in its flavour journey. It opens with a soft citrus lift – lemon myrtle and finger lime dancing lightly on the nose – before easing into warm, herbal notes. Coriander seed and cinnamon myrtle add depth, while mountain pepper leaf and aniseed myrtle offer a touch of native spice. As it lingers, the richness of roasted wattleseed begins to emerge, grounded by the fresh, green brightness of river mint and a subtle tartness from lilly pilly berries.

About the Distillery Door

Step through the doors at Kilderkin Distillery and you’ll find a space that blends rustic industrial charm with the warm heartbeat of a community hub. The floor is poured concrete, the ceiling beams are bare, and natural light filters through high windows, casting soft shadows across the copper stills and polished timber bar. Behind that bar, ‘Lola’ gleams through a glass partition – a proud centrepiece in this working distillery. She’s a 500-litre pot still named after the infamous Lola Montez, fitted with a custom Carter head – the largest of its kind in Australia when commissioned. Alongside Lola are a 1,200-litre pot still and a 50-litre column still, fuelling both the distillery’s core range and their more experimental creations.

As you take it all in, the walls catch your eye – every six weeks, they’re brought to life with a new exhibition from local artists, keeping the space fresh with each visit. The initiative supports emerging creatives from around Ballarat, with all pieces available for purchase. It’s a thoughtful touch that reflects the same creativity and local spirit you’ll find in every bottle.

Of course, no visit would be complete without a good drink in hand. You might opt for a tasting flight, or settle in with a cocktail crafted by someone who likely helped bottle the gin themselves. And if you’re feeling peckish, the toasties are a local institution. Created by Ballarat’s own Masterchef favourite, Tim Bone, the “Sir Lamb A Lot” is rich and savoury, while the “Salmon and Garfunkel” brings a fresh, herby zing. It’s a space where everything – from the drinks to the food to the art on the walls – tells a story and invites you to be part of it.

Sustainability

At Kilderkin Distillery, sustainability is part of their DNA, working alongside Ballarat growers and producers. Botanicals grown and harvested nearby, lemons peeled for limoncello shared with local cafés, and leftover fruits passed on to jam makers all form part of a circular, community-minded approach to production.

Inside the distillery, smart systems keep things efficient. A closed-loop water setup recycles thousands of litres each month, while solar panels power the site and feed energy back into the grid. Even the waste gets a second life. Used botanicals become candles, chocolates, baked treats, and also end up as goat feed. Packaging is reused or recycled, and customers are encouraged to return bottles for a discount. It’s a down-to-earth, no-fuss philosophy that keeps their footprint small and their community mighty.

Other products in the range

While Original Larrikin leads the charge, the rest of the range reads like a cast of colourful characters – each with their own personality, palate, and backstory.

There’s Buccaneer – an award-winning Navy Strength gin that balances a bold 57% ABV with citrus aplomb. With extra juniper and punchy lime, it’s smooth, strong, and made for cocktails that don’t mess around. Lola Gin is a bartender-strength gin created in collaboration with Lola restaurant at Provincial Hotel in Ballarat. She features double distillation, bold juniper, and a touch of exotic flair.

Then there’s Sunburnt Country – a love letter to the Australian bush, bottled at exactly 50.7% ABV to honour the nation’s highest recorded temperature. Earthy, intense, and unapologetically local, it’s a gin that wears its sunburnt soul with pride. 

Their take on an Old Tom Gin took nearly a decade to perfect and was well worth the wait – beautifully balanced and awarded Best in Class at the 2024 Australian Gin Awards. 

Raspberry Drop, a limited-edition pink gin, pays tribute to the famous boiled lollies from Sovereign Hill with sweet nostalgia and a tart finish. Lastly, Bramble Apple Pie Gin Liqueur wraps orchard fruit and warming spice into a dessert-worthy tipple that’s as comforting as it is indulgent.

And behind it all, whisky is quietly maturing in resized kilderkin casks – slowly coming into its own, one season at a time.

As for what’s next? Chris and Rebecca are staying tight-lipped for now. ‘Until a product is in the bottle ready for sale, we tell no-one,’ says the team. ‘Not even Garden Street!’ It’s the Larrikin way – keep your cards close, then deal a wild one when it’s least expected.

It’s easy to fall for a gin like Larrikin – not just for its flavour, but for its heart, its humour, and its unmistakable sense of self. This is a spirit made by people who love what they do and want you to have just as much fun drinking it.
