The Fizzicist

Drawing inspiration from the “great Fizz man” himself, Karlos. Sharp, bracing, with a big hit of xmas spice and ginger, this is designed to awaken the senses.  

INGREDIENTS
- 40ml Darling Gin 
- 20ml Brandy or Cognac 
- 25ml fresh lemon juice
- 15ml sugar syrup
- 20ml ginger cordial*
- 2 dashes orange bitters
- 1 egg white (or 20ml aquafaba)
- 30-45ml sparkling water

GARNISH
Grated cinnamon

METHOD
Add all ingredients except sparkling water to a cocktail shaker and dry shake (without ice) to froth up the mixture. Add plenty of ice and shake again, before double straining into a chilled highball glass. Remove the ice from the shaker and add 30-45mls of sparkling water. Swirl vigorously to froth then pour immediately into the glass to give the cocktail a nice frothy head. Using a microplane, grate enough cinnamon over the top of the drink to release its aroma.

GINGER CORDIAL RECIPE

- 150ml ginger juice 
- 225g caster sugar 
- 450ml water 
- 30ml lemon juice 
- 2 lemons juiced (whole if you have a juicer) 

Combine all ingredients in a large vessel and stir vigorously until sugar has dissolved.

This gin is a nod to you, our members. We’ve tasted hundreds of delicious Australian gins over the years and every year our tasting panel has the (really terrible) job of choosing their 12 favourite gins to share with you. It’s tough competition and they’re a very picky bunch!

Twelve months ago, we floated the idea of making something exclusively for our members; something one off and never to be repeated. It needed to be something for the collectors to add to their gin shelves and moreover, we had to make a product we were proud to share, and one delicious enough to get past our tasting panel!
