This April, we’re proud to be featuring Hiker’s Hut Apple and Honey Gin from Recollection Spirits. While we could attempt to capture the passion, memories, and intention behind this release, no one tells that story quite like Inna and Igor themselves. So, we’ll let them take it from here.
Hi Inna and Igor! We’re so excited to be featuring your Hiker’s Hut Apple and Honey Gin in our April box. To kick things off, tell us a bit about who’s behind Recollection Spirits.
Inna: Recollection Spirits is a husband-and-wife team, just the two of us. We’re both originally from Ukraine, but funnily enough, we met in New Zealand. We each lived there for over ten years before moving to Australia.
My background is in digital marketing. I’d never worked in hospitality and had nothing to do with gin or spirit production until a few years ago, when we decided to start the distillery.
Igor: I like to call it an after-work, full-time fun business activity. My background is in web development, but before that I spent several years travelling around the world working in the jewellery retail sector. Like Inna, I knew nothing about spirits production when we started.
Starting a distillery is no small feat! Where did the idea come from?
Inna: We’ve always loved visiting other distilleries and have been interested in the craft behind making spirits. For me personally, it also made sense. I’ve always enjoyed chemistry and cooking, and spirits sit somewhere between the two.
We talked about creating a product for years, but it never really moved beyond conversation. After COVID, we were both feeling worn out from our digital jobs and wanted to do something different. At first, the idea was small, just a side project or a hobby.
Once I started looking into what was involved, it became clear it was bigger than we’d expected, so I started working on a business plan.
Igor: We were both pretty burnt out from our digital jobs. After a gin festival we’d been to, we started joking about opening our own distillery. Or at least, I thought we were joking. The next morning, Inna had a business plan, and suddenly we were starting a business.
After Inna presented me with the first version of the business plan, I realised the deal was done and there was no turning back. We needed to start experimenting and actually doing something.
Rather than spending months just reading and learning, I jumped straight into making. The result was a Frankenstein creation that was technically flammable but barely qualified as a spirit. It smelled awful, like cucumber fuel and tasted even worse.
After that failed experiment, we spent a couple of years learning, talking to other distillers and trying to understand the industry as much as we could. Now, every day at the distillery is a joy... especially the cleaning.
Inna: I couldn’t bring myself to try the cucumber… liquid. The smell alone was enough.
Tell us about the space in Braeside you’re working from now. What’s the distillery like, and what sort of vibe have you created there?
Igor: It’s a small, slightly Mad Max–style warehouse, with concrete walls, exposed overkill of a ventilation system and a shy little 250-litre copper still.
Inna: It feels cosy, with an industrial-meets-vintage vibe and is a genuinely nice place to spend time.
[The ‘Meet the Makers’ tasting experience] is a relaxed but fairly detailed look at how we make our spirits. We walk guests through our production process and give a bit of a tour, even though it is a small space. The tasting includes our core range, plus some small-batch or in-progress spirits when we have them available. After that, guests can grab a cocktail and settle in at the bar.
Igor: It’s an unforgettable trip through a fenced-off factory space, a once-in-a-lifetime opportunity to hear my rant about an overpriced ventilation system and a tasting of some great spirits.
Do you have a public cellar door in the works? Or for now, where can people come and find you?
Both: You can usually find us at one or two markets most weeks, and we share our schedule on our website, so people know where to find us. Our tasting room is open by appointment for now. Looking ahead, we’re planning to run regular events featuring different cocktails and snacks each month.
Your bottles are absolutely gorgeous! Where did the design inspiration come from, and how important was that visual storytelling?
Inna: How much space do we have in this magazine? I can honestly talk about branding for hours.
Our spirits are inspired by personal experiences, places we’ve visited and flavours we genuinely love. So it was important that the brand felt timeless, not trendy, and that those stories came through in the details. Subtly. More like hints than something loud or obvious. We wanted it to feel like you’re discovering something, not being told what to think.
That’s why the labels have patterns and references you don’t necessarily notice at first glance. The mountain outline, the fern, the poem, the texture and embossing. Trust me when I say every millimetre has been considered. You have to look closely, and then look again.
Igor: We were told, on multiple occasions, not to use a tapered bottle especially with a wrap-around label. But what do they know, life is short, why keep it simple. Plus our beautiful bottles are made from recycled glass, so each one is unique and not perfectly round, which means we end up doing almost, if not everything, by hand. This is a truly handcrafted product.
Let’s talk about the inspiration behind Hiker’s Hut Gin. You describe your spirits as “stories in a bottle”, how does this one capture a moment or memory for you?
Igor: When we started thinking about why we wanted to make spirits, the first thing we came back to was translating experiences into flavours. New Zealand holds a special place in our hearts. It’s where we met, and it was the place where I felt like I belonged from the moment I stepped off the plane.
The South Island was my happy place, and Hiker’s Hut is my take on that memory. A memory of hikes, good times, changing weather, warm sun and crisp mountain air.
We knew we wanted to make a dry gin, but with a spark of something extra. Almost like a faint memory of an experience you once had. That added flavour was meant to feel like a memory trigger. You know the moment when you’re sitting around a table with good people and suddenly something comes back to you. You start talking, one thing leads to another, and before you know it you’re inspiring each other to travel and see new places.
The experience starts with aromatic honey on the nose. We use meadow honey, so the honey character changes slightly from season to season. The mid-palate is a classic dry gin with a gentle cardamom bite. Then comes the apple. For some, it comes across more like baked apple. For me, it’s closer to fresh apple peel.
We imagine there were a few recipe trials to get it just right. How did you know when you’d nailed it?
Igor: Honestly I lost count but around 40 - 50 iterations. To us, it’s the right balance between smoothness, strength and flavour. It also means you can make a G&T that doesn’t just taste like tonic. The gin cuts through nicely.
What else is in your range that we should know about?
Igor: You have to try the Nalyvka. Neat or on the rocks, and then with gin over ice. It’s just heavenly.
Inna: We make a sour cherry Nalyvka inspired by Ukrainian summers and traditional fruit liqueurs made at home. It’s made with fresh sour cherries and is probably nothing like what you’ve tried before. A little sweet, a little tart and far too easy to drink.
We also made a limited-edition Pumpkin Pie liqueur, which sold out twice before Christmas. We’re planning to bring it back again this year.
It’s clear that Recollection Spirits is just getting started, and we’re excited for our members to taste that spirit of adventure in every drop of Hiker’s Hut. Cheers!
