Tinberry Pear Sour

Switch up your sour game! This cracking cocktail features pear juice and cinnamon bitters for slightly sweetened, warming autumnal flavour. 

INGREDIENTS 

- 60ml Tinberry Signature Gin 

- 45ml pear juice 

- 30ml lemon juice 

- 15ml sugar syrup (or more, to taste) 

- 3 drops wonderfoam / 1 egg white 

- 3 drops cinnamon bitters 

GARNISH 

- Cinnamon (or Angostura) bitters 

METHOD 

Add all ingredients to cocktail shaker, and dry shake (without ice) for 30 seconds. Add ice, and shake again until shaker tin is frosted on the outside. Double strain into a coupe glass. Garnish with bitters, and enjoy! 

Cinnamon Syrup Recipe
No cinnamon bitters in the pantry or at your local bottleshop? No problem. You can make your own cinnamon infused simple syrup to bring the earthy flavour to this cocktail. Swap 1:1 for the simple syrup, and use another bitters to garnish.

Simply add 1 part white sugar, 1 part water and a cinnamon stick in a small saucepan, and heat until sugar is dissolved. Let cool completely before use. Will keep in the fridge for two weeks in a sealed container.
