Blood Sage Gin Cocktail

This herbaceous take on a Gin Sour boasts bittersweet blood orange and a delicate balance of winter flavours. Perfect fireside sipping.

INGREDIENTS
- 3 fresh sage leaves

- 60ml Square 1 Big Red Gin

- 20ml lime juice

- 1/4 blood orange, in wedges

- 15ml sugar syrup

- 15ml egg white

GARNISH
- Sage leaf

METHOD
In the bottom of a cocktail shaker, muddle sage leaves and blood orange wedges. Add lime juice, simple syrup, gin and egg white. Dry shake (without ice) for 30 seconds. Fill with ice, and shake again until well chilled. Double strain into a chilled coupe glass. Garnish with a
sage leaf.
